As I mentioned in my last post, I’m on a mission to banish sugar out of my life, at least for a little while. Let’s be clear, I don’t mean cutting out sweet things entirely, just refined sugar (and things similar to it). So here goes this week’s healthy Sunday treat: Spelt waffles! They don’t taste like cardboard, they’re totally delicious actually.
What you’ll need (approximately – you’ll have to mix/taste yourself for the right consistency):
4 eggs
0.5 cup (or slightly more) buttermilk
2-3 tbsp agave
1 tbsp ground vanilla
1 tbsp vanilla extract
2 tbsp coconut oil/fat
1.5 cups whole spelt flour
for the sauce:
1 cup unsweetened greek yoghurt
1 tbsp ground vanilla
1 tsp agave
blueberries
How to do it:
1. Separate 3 eggs
2. Whisk egg whites until stiff
3. Lightly beat 3 egg yolks plus 1 whole egg
4. Add the buttermilk, coconut oil, agave and vanilla. Whisk together
5. Sift the spelt flour over the wet mixture and whisk everything together evenly
6. Fold the egg white under the mixture
7. Make the waffles – hooray!
8. I made a little yoghurt sauce with unsweetened greek yoghurt, more vanilla (yessss) and just a little more agave. Serve with blueberries.
9. Enjoy and don’t feel guilty, it’s all good!
