Making mayo at home is actually so easy… Here’s how I made mine:
1. Whisk 2 egg yolks in a bowl.
2. Add some grainy mustard, whisk a little more.
3. Now’s the (only) tricky bit: add a tiny bit of sunflower oil at a time while whisking. If you add too much oil it won’t work. Keep adding more and more oil (at least a cup in total) and don’t stop whisking. This can take a good few minutes.
4. Now add a dash of white wine vinegar, a squeeze of lemon, some salt & pepper and garlic if you like. Ready!
