I took this scrumptious recipe from the lovely Molly Yeh – I’ve got to add though that the 1 cheesecake that was left over in the fridge the next day tasted FAR better after a good rest. Somehow everything got ‘moussier’ with time. So resist the temptation and let it SIT.
