The way I see it

this is more work than it looks (pumpkins are a pain to peel..), but once it’s cooked it’s delicious and will also last for a few days…

you’ll need:

  • 2 small pumpkins, chopped into cubes
  • 4 small courgettes, sliced
  • 2 green apples, grated
  • bag of baby spinach.
  • 1 onion
  • ginger, grated
  • some natural yoghurt
  • some coconut cream
  • indian spices such as curry spice, chilli, cumin
  • 1 portion of vegetable stock
  • vegetable oil

1. boil the pumpkins for about half an hour to soften

2. heat some oil in a deep pan, add all spices and ginger. then add onion.

3. add veg stock and apples. simmer for a few minutes

4. add the courgettes and pumpkin, simmer for 15-20 mins

6. now add the yoghurt and coconut cream, stir in and taste

7. finally stir in the spinach and let that simmer for a minute

8. serve with rice

  • Another day, another attempt. Nice ear developed from scoring 🐰! Very happy with the flavour and the crumb is improving, becoming more open, although something strange went on with a couple of random big air pockets in between. Bad shaping? 🤷🏻‍♀️ -
This one was: 900g organic wheat, 100g rye, 750g water, 200g levain, 20g salt. 4h bulk ferment and about 13h overnight fridge proof.
